If there’s two things in the world I love… that’s soup and sweet potato. So after cooking my pizza rolls and sweet potato wedges (see my next post) – I still have plenty of sweet potato left! This was when I stumbled onto this pin and found this recipe.
There were a couple of things I did change – mainly because a.) I’m a bit too impatient and cooking isn’t my favourite thing and b.) I don’t like things that are spicy/hot/slight kick to it… my mouth cries out and I just want to curl up in a ball (Yep I know… wuss!)
What did I change? Well I kept the onion and the chilli out – but other than that, that was it! I found it was so easy to make when boiling for the vegetables to go soft then blend (after they cooled down… I already burnt myself on the oven!)
So the overall taste? Oh. My.
I can understand that the slight kick to it would add much more – but again, I’m picky and too much of a wimp to venture when it comes to food. But this was incredibly creamy and wasn’t too heavy. Plus if I add croutons – it’ll add extra flavour
I made two portions for work this week… However I’m really tempted to have one now!
